Ingredients:

  • 1 cup cooked chicken (shredded)
  • 1/2 cup black beans (drained & rinsed)
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup diced red bell pepper
  • 1/4 cup green onions (chopped)
  • 1 jalapeño (optional, if you like it spicy 🌶️)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Egg roll wrappers (find these in the refrigerated section)
  • Vegetable oil (for frying)

Instructions:

1.Mix it up! In a big bowl, throw in your chicken, black beans, corn, cheese, red bell pepper, green onions, jalapeño (if you’re daring), cumin, and chili powder. Stir until everything is well blended.

2.Wrap it! Lay out an egg roll wrapper like a diamond. Add about 2 tablespoons of the filling in the center. Fold the bottom corner over the filling

3.Fry time! Heat about 1 inch of oil in a skillet over medium heat. Once hot, carefully place the egg rolls in and fry for about 3-4 minutes per side, or until they’re golden brown and crispy.

Drain & Serve! Once they’re done, place them on a paper towel to drain off any excess oil. Serve with salsa, guac, or sour cream on the side.
