Perfect for a chill night or when you just wanna feel all warm and fuzzy inside. 😋 Let’s make it!

Ingredients:

  • 1 whole chicken (about 4-5 lbs) 🐔
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup small pasta (like ditalini or orzo)
  • 1 zucchini, diced
  • 2 cups spinach (optional but yum)
  • 1 tbsp olive oil
  • 2 tsp salt (or to taste)
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp crushed red pepper flakes (optional if you like a little spice 🌶️)
  • 8 cups chicken broth
  • 1 lemon (for squeezing)

1.Cook the Chicken: In a large pot, add your whole chicken, carrots, celery, onion, garlic, and chicken broth. Bring it to a boil, then lower the heat to simmer for about 1-1.5 hours,

2.Shred the Chicken: Take out the chicken and let it cool for a few minutes. Then, shred the meat off the bones. Toss the bones and keep that juicy chicken ready for the soup. 🐔💪

3.Add the Veggies: Throw in the diced tomatoes, zucchini, spinach (if you’re using it), and the pasta into the broth. Add the olive oil, salt, pepper, oregano, and crushed red pepper flakes. Let it all simmer for about 15-20 minutes until the pasta is cooked and the veggies are soft.

Chicken Time: Add the shredded chicken back into the pot. Give it all a big stir, and let it warm up for a few more minutes.

5.Taste & Serve: Squeeze a little lemon juice into the soup for some extra zesty flavor. Give it a taste, add more salt or pepper if needed, and you’re ready to serve up some seriously comforting Sicilian vibes. 🍋✨
