Alright guys, if you’re a fan of shrimp AND pasta (who isn’t?), this Shrimp Pesto Pasta is about to become your new go-to!

It’s fresh, flavorful, and super easy to whip up—perfect for a quick weeknight dinner. Let’s make some magic! 🍤🍝🌿

Ingredients:

  • 12 oz pasta (penne, spaghetti, or whatever you like)
  • 1 lb shrimp (peeled and deveined)
  • 2 cups fresh basil pesto (store-bought or homemade)
  • 2 tbsp olive oil
  • 3-4 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste
  • Optional: cherry tomatoes or a squeeze of lemon for extra flavor

Instructions:

  1. Cook the pasta: Boil your pasta according to the package directions. Drain and set aside, but save about 1/2 cup of pasta water (it’ll help make the sauce super creamy).

2.Cook the shrimp: In a large pan, heat the olive oil over medium heat. Add the garlic and cook for about 30 seconds until it smells amazing. Throw in the shrimp and season with salt and pepper. Cook the shrimp for about 3-4 minutes per side, until they’re pink and cooked through.

3.Add the pesto: Once the shrimp are cooked, turn the heat to low and stir in your pesto sauce. Add a little bit of the reserved pasta water to thin it out if needed.

4.Mix it all together: Toss the cooked pasta into the pan with the shrimp and pesto sauce. Stir everything together until the pasta is coated and the shrimp are all mixed in.

Serve: Sprinkle with grated Parmesan cheese and add some cherry tomatoes or a squeeze of lemon for extra flavor. You’re ready to dig in!
