Yo, let’s talk about the easiest side dish ever—roasted cherry tomatoes!

These lil’ guys are bursting with flavor and are perfect for tossing on pasta, pizza, or just snacking on straight from the pan

Let’s roast ‘em up!

Ingredients:

  • 2 cups cherry tomatoes (as many colors as you like!)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced 🧄
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil or thyme (your call!)
  • Optional: a sprinkle of parmesan cheese 🧀 or fresh basil 🌿

Directions:

1.Preheat your oven to 400°F (200°C). You want it hot so the tomatoes get all nice and roasty! 🔥

2.Prep the tomatoes by giving them a quick wash and pat them dry. Then, toss them into a bowl.

3.Drizzle olive oil all over the tomatoes. Make sure every tomato is covered. Trust me, it’s gonna give that yum factor.

4.Add the garlic for that garlicky goodness! Toss in the salt, pepper, and dried herbs too. Mix it all up until those tomatoes are fully seasoned.

5.Spread the tomatoes onto a baking sheet lined with parchment paper (easy clean-up vibes) in a single layer. Make sure they’ve got space to roast!

6.Roast for 15-20 minutes. Keep an eye out for when they start to blister and get a bit soft—that’s the sweet spot! 😋
