this One Pot Lasagna Soup is EVERYTHING. It’s like your fave lasagna in soup form—cheesy, beefy, and so dang good. Plus

Ingredients:

  • 1 lb ground beef (or Italian sausage for extra flavor)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken broth
  • 8 lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes (optional, for a little kick)
  • Salt & pepper to taste
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil or parsley (optional, for garnish)

Let’s Make It! 🍲

Cook the Meat: In a large pot, brown the ground beef (or sausage) over medium heat. Add the diced onion and minced garlic, cooking until the onion is soft and the meat is fully cooked. Drain any extra grease.

Build the Soup: Add the crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, garlic powder, red pepper flakes, salt, and pepper to the pot. Stir it all together and bring it to a boil. 😋

Add the Noodles: Once it’s boiling, toss in your broken lasagna noodles. Let them cook for about 10-12 minutes, or until they’re soft but still have a bit of a bite. Keep stirring so nothing sticks!
