What You’ll Need
For the Soup:
- 2 tablespoons butter
- 2 large onions, thinly sliced
- 3 cups mushrooms, sliced (button, cremini, or whatever you love!)

- 4 cups chicken or veggie broth
- 1 teaspoon thyme (fresh or dried)
- 1/2 cup heavy cream
- Salt and pepper to taste

For the Toasties:
- 4 slices of bread (sourdough or whatever’s in your pantry)
- 1 cup shredded cheese (cheddar, Gruyère, or a mix—go wild!)
- Butter for spreading
For the Bacon:
- 4 slices of bacon (crispy is key!)

How to Make It
Step 1: Caramelize the Onions
- Heat the butter in a big ol’ pot over medium heat.
- Toss in the onions and cook low and slow for like 20 minutes until they’re golden and sweet. Stir them so they don’t stick or burn.

Step 2: Cook the Mushrooms
- Add the mushrooms to the pot with the onions.
- Cook until they’re soft and kinda golden—this takes about 8 minutes. Toss in the garlic and thyme, and cook for 1 more minute

Step 3: Make the Soup
- Pour in the broth and let everything simmer for 10 minutes so the flavors do their thing.
- Stir in the cream, season with salt and pepper, and BOOM! Soup’s ready.

Step 4: Toastie Time!
- Spread butter on one side of each slice of bread.
- Pile the cheese on the non-buttered side, sandwich it together, and cook in a skillet until the bread is golden and the cheese is melty.

Step 5: Bacon, Baby
- Fry up the bacon in a pan or bake it in the oven until it’s crispy perfection.
- Crumble or leave it whole—it’s up to you!
