Hey everyone! 🍲🍝 Ever wished you could turn lasagna into a soup?

Well, today we’re making Lasagna Soup—it’s like your favorite lasagna, but in a bowl and super cozy!

Perfect for chilly days or when you just want something comforting and delicious. Let’s get cooking!

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 2 cups uncooked pasta (like rotini or elbow macaroni)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

Cook the beef: In a large pot, brown the ground beef over medium heat. Add the diced onion and minced garlic, and cook until the onion is soft.

Add the tomatoes: Stir in the diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring the mixture to a boil.

Add the pasta: Reduce heat and let it simmer for about 10 minutes. Then, add the uncooked pasta and cook until the pasta is tender.

Cheese it up: Stir in the ricotta cheese and let it warm through. This makes the soup creamy and awesome!

Serve it up: Ladle the soup into bowls and sprinkle with shredded mozzarella and Parmesan cheese. Garnish with fresh basil if you’re feeling fancy.
