Ingredients :
1½ cups cooked sticky rice
½ teaspoon Italian seasoning blend
¾ teaspoon salt
8 pitted black olives
1 ounce mozzarella cheese cut into tiny sticks (small enough to stuff into olives)
2 eggs, beaten
⅓ cup Italian breadcrumbs
¾ cup panko breadcrumbs
oil for misting or cooking spray
Directions :
1. Preheat air fryer to 390°F.
2. Stir together the cooked rice, Italian seasoning, and ½ teaspoon of salt.
3. Stuff each black olive with a piece of mozzarella cheese.
4. Shape the rice into a log and divide into 8 equal pieces. Using slightly damp hands, mold each portion of rice around an olive and shape into a firm ball. Chill in freezer for 10 to 15minutes or until the outside is cold to the touch.
5. Set up 3 shallow dishes for dipping: beaten eggs in one dish, Italian breadcrumbs in another dish, and in the third dish mix the panko crumbs and remaining salt.
6. Roll each rice ball in breadcrumbs, dip in beaten egg, and then roll in the panko crumbs.
7. Spray all sides with oil.
8. Cook for 10minutes, until outside is light golden brown and crispy.
