Ingredients:
- 5 pounds chitterlings (pre-cleaned)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon vinegar
- 2 bay leaves
- Salt and pepper to taste
- Hot sauce (optional, for serving)
Instructions:
- Rinse the chitterlings: Even if they are pre-cleaned, give the chitterlings a good rinse in cold water. Make sure they’re as clean as possible!
Boil it up: In a large pot, add the rinsed chitterlings and enough water to cover them completely. Add the chopped onion, garlic, vinegar, bay leaves, salt, and pepper.
Cook them: Bring the pot to a boil, then reduce the heat to low and let it simmer for 4-5 hours. Stir occasionally and make sure there’s always enough water to keep the chitterlings covered.
Taste and adjust: Once they’re tender, taste the chitterlings and add more salt, pepper, or even a dash of hot sauce if you like it spicy.
