Heyyyy! Today, we’re making Tiramisu Cake Cupcakes, and OMG, they’re SO easy and delish!

If you love coffee, cake, and creaminess, then these cupcakes are your new BFF.

They taste just like classic tiramisu, but in cute little cupcake form. Let’s get started!

Ingredients:

  • 1 box of vanilla cake mix (super easy, right?)
  • 1 cup brewed coffee (let it cool down)
  • 1/4 cup coffee liqueur (or use more coffee if you don’t want liqueur)
  • 8 oz mascarpone cheese (basically creamy magic)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract
  • Cocoa powder (for dusting)
  • Chocolate shavings (optional, but SO fancy!)

Instructions:

Bake the cupcakes:
1.Preheat your oven to 350°F (180°C). Follow the instructions on your cake mix box to make the vanilla cupcakes. (Pro tip: add a little vanilla extract to the batter for extra flavor!) Bake and let them cool completely.

2.Make the coffee soak:
In a small bowl, mix the cooled coffee and coffee liqueur together. If you’re skipping the liqueur, just use coffee – it’s still awesome.

Soak the cupcakes:
3.Using a fork, poke small holes on top of each cupcake. Gently spoon the coffee mixture over the cupcakes so it soaks in. Don’t drown them, just enough to give them that tiramisu flavor!

4.Whip up the topping:
In a bowl, whisk the heavy cream until soft peaks form (fluffy and cloud-like!). In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth. Fold the whipped cream into the mascarpone mixture until combined and dreamy.

5.Frost the cupcakes:
Using a piping bag or a spoon, frost the top of each cupcake with that delicious mascarpone cream.

Finish with flair:
Dust cocoa powder on top of each cupcake. If you’re feeling fancy, sprinkle some chocolate shavings on top. Boom, instant wow factor!
