Ingredients:
Fresh lemon wedges for serving (optional)
2 salmon fillets (skinless, about 6 oz each)
8 oz pasta (I like penne or fettuccine, but use your fave!)
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 onion, finely chopped
1 cup baby spinach (optional, but it’s a sneaky way to add greens!)
1 tbsp olive oil
1 tbsp butter
Salt and pepper to taste

Instructions:
1.Cook the Pasta: Start by boiling your pasta in a big pot of salted water. Follow the package instructions until it’s al dente. Once done, drain the pasta, but keep about 1/2 cup of the pasta water—you might need it for the sauce later!

2. Cook the Salmon: While the pasta’s cooking, season your salmon fillets with salt and pepper. In a large pan, heat the olive oil over medium-high heat. Add the salmon and cook for about 3-4 minutes on each side, or until it’s cooked through and flaky. Once done, set the salmon aside on a plate.
