Ingredients:
For the cupcakes:
- 1 box vanilla cake mix (easy peasy!)
- 3 eggs (check your cake mix instructions)
- 1/2 cup vegetable oil
- 1 cup water
For the cannoli filling:
- 1 cup ricotta cheese (the classic cannoli filling ingredient!)
- 1 cup mascarpone cheese (super creamy)
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips (yum!)
Instructions:
- Bake the cupcakes:
Preheat your oven to 350°F (180°C). Prepare the vanilla cake mix according to the box (basically, mix the eggs, oil, and water with the cake mix). Fill your cupcake liners and bake for about 18-20 minutes. Let them cool completely.
2.Make the cannoli filling:
In a bowl, mix the ricotta, mascarpone, powdered sugar, and vanilla extract until smooth and creamy. Stir in the mini chocolate chips because cannoli NEEDS chocolate!
3.Core the cupcakes:
Once your cupcakes are cooled, use a small spoon or a cupcake corer (if you have one) to scoop out the center of each cupcake. Not too much—just enough to fill with that yummy cannoli filling.
