How to make it

  • Dough
  • 1. Combine water and yeast, let sit while you prep the rest of the ingredients.
  • 2. Combine the bread flour, sugar, and kosher salt in the bowl, mix and combine.
  • 3. Next add the water and yeast mixture and 2 tablespoons of oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball, with just a little tackiness to it. If the dough is to dry, add additional water, 1 tablespoon at a time.
  • 4. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  • 5. Grease a large bowl with the remaining 2 teaspoons of olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1-2 hours.
  • 6. For a flaky buttery crust about 1-2 hours before you make pizzas turn the dough out onto a lightly floured surface and roll out into a rectangle about the size of a baking pan about 1/2in thick, spread one stick of softened butter covering one whole side, roll back like a Swiss roll, then ball it up into a bowl and let it rest for 1-2 hours in the fridge before making pizzas.
  • Pizza Sauce
  • 1. Sauté the grated onion until it starts to brown.
  • 2. Add garlic and seasonings for 30 seconds.
  • 3. Add crushed tomatoes, bring to boil, reduce
  • to medium simmer. Once it’s thickened and reduced a bit, it’s done. Generally about 30-60 mins for simmering
  • Sauce from fresh tomatoes
  • 1. Wash the tomatoes then dip in boiling water for 30 to 60 seconds.
  • 2. Immediately dip in cold water. Slip off skins.
  • 3. Trim away any green areas and cut out the core.
  • 4. Transfer to a large stainless steel saucepan and bring to a boil over medium-high heat.
  • 5. Use a potato masher to help crush tomatoes and release the juices.
  • 6. Stir often and add more tomatoes, being careful to avoid scorching.
  • 7. The remaining tomatoes do not need to be crushed, as they will soften with heating and stirring.
  • 8. Continue until all tomatoes are added, then boil gently for 5 minutes.
  • 9. Then follow regular sauce directions.
  • Pizza
  • 1. Preheat Oven to 400-425 degrees
  • 2. Layer meats and cheese in a deep dish with dough already in the pan, with the last layer just cheese.
  • 3. Cut remaining dough off sides of deep dish and add the sauce to the top, tuck edges of pizza crust in and coat with butter (butter garlic sauce).

  • 4. Bake for 45 mins to an hour depending on the oven, remove and let stand for 10 mins remove from pan and cut pieces.
  • Garlic Sauce
  • 1. Place all ingredients into a blender and liquify.
