It’s packed with sausage, potatoes, and all the creamy goodness you need. Plus, it’s super easy to make

Ingredients:

  • 1 lb Italian sausage (mild or spicy, your choice!)
  • 4 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 cups fresh spinach (or kale)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan (for topping!)

Instructions:

  1. Cook the Sausage – In a large pot, cook your Italian sausage over medium heat until browned. Break it up as it cooks so you get nice, bite-sized pieces. Once it’s done, set it aside on a plate.

Sauté the Veggies – In the same pot, add your diced onion and garlic. Cook them in the sausage grease (so much flavor!) for about 2-3 minutes until they’re soft.

Add Potatoes and Broth – Throw in your diced potatoes and pour in the chicken broth. Bring it to a boil, then reduce to a simmer. Let it cook for about 15 minutes or until the potatoes are tender.

Make it Creamy – Stir in the heavy cream and add the Italian seasoning. Let it simmer for another 5 minutes to thicken up.

Add Sausage and Spinach – Toss the cooked sausage back into the pot along with the spinach. Stir until the spinach wilts and everything is well combined.

Season and Serve – Taste the soup and add salt, pepper, or more seasoning if you need. Serve with some Parmesan cheese on top for extra yumminess!
