Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

Cook the pasta: Boil the fettuccine in salted water according to package directions. Drain and set aside

Sauté the shrimp: Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove shrimp from the skillet and set aside.

Make the Alfredo sauce: In the same skillet, melt the butter over medium heat. Add minced garlic and cook for about 1 minute. Pour in the heavy cream, then bring it to a simmer.

Cheese time: Slowly whisk in the Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper.

Mix it all together: Add the cooked fettuccine and shrimp back into the skillet. Toss everything together until the pasta is fully coated in sauce.
