which is basically stuffed pasta shells filled with chicken, cheese, and all the yum!
This is a perfect dish for a cozy night in and sooo easy to make. Let’s get cooking!
Ingredients:
- 1 box (8 oz) manicotti shells
- 2 cups cooked chicken, shredded or diced
- 1 cup ricotta cheese
- 1 ½ cups shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Cook the manicotti: Boil the pasta shells according to package directions until al dente. Drain and set aside to cool.
Prepare the filling: In a bowl, mix the shredded chicken, ricotta cheese, 1 cup mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.Stuff the shells: Using a spoon (or your hands—no shame!), carefully stuff each manicotti shell with the cheesy chicken mixture.
Assemble the dish: Spread 1 cup of marinara sauce on the bottom of your baking dish. Arrange the stuffed manicotti shells on top, then pour the remaining sauce over them.
