Ingredients:
- 1 pound dried beans (pinto, navy, or black-eyed peas)
- 2 smoked ham hocks
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups water or chicken broth
- Salt and pepper to taste
- Optional: hot sauce for a kick!
Instructions:
- Prep the beans: Rinse and sort the beans. If you have time, soak them in water overnight (or use the quick soak method by boiling them for 2 minutes, then letting them sit for an hour).
Cook the ham hocks: In a large pot, add the ham hocks, onion, garlic, and water or chicken broth. Bring to a boil, then reduce to a simmer for about 1 hour.
Add the beans: Once the ham hocks have cooked down, add the beans to the pot. Let everything simmer together for another 1-2 hours, or until the beans are soft and tender.
Season and serve: Add salt and pepper to taste, and serve your beans with some cornbread or rice. Don’t forget the hot sauce if you like it spicy!
