Picture crispy taco shells loaded with sweet, cinnamon-spiced apples and topped with creamy whipped cream. It’s like your fave apple pie had a baby with a taco. Letโs do this!
Ingredients:
For the Apple Filling:
- 4 large apples (Granny Smith or Honeycrisp are 🔥)
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg (optional but yum)
- 1 tbsp lemon juice
- 2 tbsp butter
- 1 tbsp cornstarch mixed with 1 tbsp water (for thickening)
For the Tacos:
- 6-8 small flour tortillas
- 1/4 cup melted butter
- 1/2 cup cinnamon sugar (mix 1/2 cup sugar + 1 tbsp cinnamon)
Toppings:
- Whipped cream or vanilla ice cream
- Caramel sauce (because why not?)
Instructions:
Step 1: Make the Apple Filling
- Peel & Chop: Peel the apples and chop them into small piecesโabout the size of a dime. Not too big, not too small, just right.
Thicken It: Mix in the cornstarch slurry (thatโs the cornstarch + water) and cook for another 2 minutes until the sauce thickens up. Remove from heat and let it cool while you make your taco shells.
Step 2: Make the Taco Shells
- Preheat Oven: Preheat your oven to 400ยฐF (200ยฐC).
- Prep the Tortillas: Brush both sides of each tortilla with melted butter and then coat them in the cinnamon sugar mix.
Shape the Shells: Flip a muffin tin upside down and place the tortillas between the cups to form taco shapes. You can also use oven-safe bowls or taco molds if you have them.Bake: Bake for about 5-7 minutes, or until the tortillas are crispy and golden brown. Let them cool for a couple of minutes before filling.
Step 3: Assemble the Tacos
- Fill ‘Em Up: Spoon a generous amount of the apple filling into each taco shell.
- Top It Off: Add a big dollop of whipped cream or a scoop of ice cream, and drizzle with caramel sauce for extra sweetness
