I got this recipe in a cooking class I took years ago. You will be surprised how moist and delicious this comes out. Cooks quickly and I especially love it in the summer.Doesn’t heat up the kitchen

Ingredients

  • 1 lb. ground beef
  • 1 egg
  • 1/4 c ketchup
  • 2 TB water
  • garlic powder to taste 
  • salt and pepper to taste. 
  • 1/3 c bread crumbs 
  • Topping: 
  • 2 TB ketchup shopping list
  • 1 TB water
  • 1 small onion, sliced

How to make it

Instructions:

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, ketchup, chopped onion, chopped green bell pepper, Worcestershire sauce, garlic powder, salt, black pepper, and beaten egg. Mix well until all ingredients are combined.
  2. Shape the mixture into a loaf shape and place it in a microwave-safe dish.
  3. In a small bowl, mix together the glaze ingredients: ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  4. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
  5. Microwave on high for 12-15 minutes or until the internal temperature reaches 160°F (71°C). You may need to adjust the cooking time based on the wattage of your microwave.
  6. Allow the meatloaf to rest for a few minutes before slicing.

Note: Cooking times may vary depending on the wattage of your microwave, so it’s a good idea to check the internal temperature to ensure the meatloaf is fully cooked.
