Ingredients :

Nantucket Granola
¼ cup maple syrup
¼ cup dark brown sugar
1 tablespoon butter
1 teaspoon vanilla extract
1 cup rolled oats
½ cup dried cranberries
½ cup walnuts, chopped
¼ cup pumpkin seeds
¼ cup shredded coconut
Blueberry Delight
¼ cup honey
¼ cup light brown sugar
1 tablespoon butter
1 teaspoon lemon extract
1 cup rolled oats
½ cup sliced almonds
½ cup dried blueberries
¼ cup pumpkin seeds
¼ cup sunflower seeds
Cherry Black Forest Mix
¼ cup honey
¼ cup light brown sugar
1 tablespoon butter
1 teaspoon almond extract
1 cup rolled oats
½ cup sliced almonds
½ cup dried cherries
¼ cup shredded coconut
¼ cup dark chocolate chips
oil for misting or cooking spray

Directions :

1. Combine the syrup or honey, brown sugar, and butter in a small saucepan or microwave-safe bowl. Heat and stir just until butter melts and sugar dissolves. Stir in the extract.
2. Place all other dry ingredients in a large bowl. (For the Cherry Black Forest Mix, don’t add the chocolate chips yet.)
3. Pour melted butter mixture over dry ingredients and stir until oat mixture is well coated.
4. Lightly spray a baking pan with oil or cooking spray.
5. Pour granola into pan and cook at 390°F for 5minutes. Stir. Continue cooking for 5minutes, stirring every minute or two, until golden brown. Watch closely. Once the mixture begins to brown, it will cook quickly.
6. Remove granola from pan and spread on wax paper. It will become crispier as it cools.
7. For the Cherry Black Forest Mix, stir in chocolate chips after granola has cooled completely.
8. Store in an airtight container.
