Ingredients :

2 lb beef brisket and cut into chunks
2 tsp salt
8 garlic cloves
2 cup onion chopped
2 tsp oregano
½-cup coriander
2 Chipotle chilies
4 cup beef broth

Directions :

1. As directed in the basic rules of this eBook, sterilize bottles in a pressure canner. Allow all bottles to cool before using.
2. Season meat with salt and pepper in a saucepan. Turn on the heat, and sear for 3 minutes on both sides. Combine onion and garlic in a mixing bowl. Cook for a fair minute. Combine the remaining ingredients in a mixing bowl.
3. Simmer the beef for 20 minutes over medium heat with the lid closed. Remove the pan from heat, and set it aside to cool slightly.
4. Fill bottles with the mixture.
5. Pop air bubbles in the lid and seals it.
6. Fill the pressure canner with jars. Fill the pressure canner halfway with water and process 25 minutes.
