Hey everyone! Today, I’m making the ultimate comfort food—Shredded Chicken Gravy on Mashed Potatoes!
It’s creamy, hearty, and super easy to make. Perfect for when you need a cozy meal. Let’s get cooking!
Ingredients:
For the chicken and gravy:
- 2 cups cooked, shredded chicken (store-bought rotisserie works great)
- 2 tbsp butter
- 2 tbsp flour
- 2 cups chicken broth
- ½ cup milk or cream
- Salt and pepper to taste
Instructions:
- Make the mashed potatoes: Boil the potatoes in a large pot of water for 10-15 minutes, or until they’re soft. Drain the water, then mash the potatoes with butter, milk, salt, and pepper until creamy.
Make the gravy: In a skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute, making a roux. Slowly whisk in the chicken broth and milk, cooking until it thickens (about 5 minutes).
Add the chicken: Stir in the shredded chicken, and season with salt and pepper. Let it simmer for a few minutes to heat through.
Serve: Spoon the mashed potatoes onto a plate, then top them with the delicious shredded chicken gravy. Enjoy the comfort!
