Ingredients:
- 1 can (15 oz) sliced peaches (drained and chopped)
- ¼ cup brown sugar
- 1 tsp cinnamon
- 1 tsp cornstarch (optional, to thicken)
- 1 tsp vanilla extract
- 8-10 egg roll wrappers
- Vegetable oil (for frying)
- Powdered sugar (for dusting)
- Whipped cream or vanilla ice cream (for serving)
Instructions:
- Make the peach filling: In a bowl, mix the chopped peaches, brown sugar, cinnamon, cornstarch (if using), and vanilla extract. Stir it all together until the peaches are coated and it’s nice and sweet.
Assemble the egg rolls: Lay out an egg roll wrapper, spoon some of the peach filling into the center, and fold the wrapper like a burrito (fold the sides, roll it up, and seal the edge with a little water).
