Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups ripe mango, chopped
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat the oven: Set your oven to 350°F (175°C) and grease a loaf pan.
Mix the dry stuff: In a bowl, whisk together the flour, baking soda, cinnamon, and salt.
Mix the wet stuff: In another bowl, beat the eggs, sugar, brown sugar, oil, and vanilla until smooth.
Combine: Slowly add the dry ingredients into the wet ingredients, mixing just until combined. Then fold in the chopped mango and nuts (if using).
Bake it up: Pour the batter into the greased loaf pan. Bake for 50-60 minutes, or until a toothpick comes out clean.
