📝 Ingredients:
- 1 can (14 oz) salmon, drained and flaked
- 1/4 cup breadcrumbs (plus extra for coating)
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1 egg
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley (optional, but fancy!)
- 2 tablespoons olive oil (for frying)

- Mix It Up: In a big bowl, combine the flaked salmon, breadcrumbs, diced onions, and bell peppers. Add in the egg, mayo, Dijon mustard, garlic powder, salt, pepper, and lemon juice. Mix everything together until it’s all combined. You’re basically making a salmon party in a bowl! 🥳
Form the Patties: Scoop up some of the salmon mixture and form it into little patties, about the size of your palm. You should be able to get 6-8 croquettes depending on how big you make them. Coat each patty in some extra breadcrumbs for that crispy goodness.
