Ingredients:
For the Pudding:
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 2 3/4 cups whole milk
- 5 large egg yolks (save the whites for an omelette or something!)
- 2 tbsp unsalted butter
- 2 tsp vanilla extract
For the Layers:
- 4-5 ripe bananas (the more spots, the better!)
- 1 box of Nilla wafers or your fave vanilla cookies
- Whipped cream (homemade or store-bought, your call)
Instructions:
Step 1: Whip Up the Pudding
- Mix It Up: In a medium saucepan, whisk together the sugar, cornstarch, and salt.
Add the Milk: Slowly pour in the milk while whisking to avoid lumps (nobody wants lumpy pudding, ew).
Egg Yolk Time: In a small bowl, whisk the egg yolks. Add about 1/2 cup of the milk mixture into the yolks to temper them (this means warming them up so they don’t scramble in the pudding—yikes).
Combine: Pour the yolk mixture back into the saucepan with the rest of the milk. Keep whisking over medium heat until it thickens up, about 6-8 minutes. You’ll know it’s done when it coats the back of a spoon.
Butter & Vanilla: Remove from heat and stir in the butter and vanilla. This makes it super creamy and delicious!
Step 2: Slice & Layer
- Banana Prep: Slice up those bananas into nice, even pieces.
- Layer It Up: In a large bowl or a trifle dish, start with a layer of Nilla wafers. Add a layer of banana slices on top, then pour over some of that homemade pudding. Repeat the layers until you run out or your bowl is full!
Step 3: Chill & Serve
- Chill: Cover your pudding with plastic wrap, pressing it directly onto the surface to avoid that weird pudding skin. Pop it in the fridge for at least 3 hours or overnight if you can wait that
Serve: When you’re ready to devour, top with whipped cream and a few extra cookies for crunch.
