Ingredients:

  • 1 (3-4 lb) chuck roast
  • 2 tbsp olive oil
  • 1 packet onion soup mix (or your favorite seasoning blend)
  • 1 cup beef broth
  • 1 cup water
  • 4-5 potatoes, peeled and quartered
  • 1 large onion, cut into wedges
  • 2-3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Directions:

  1. Sear the Roast: Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the chuck roast with salt and pepper on all sides. Sear the roast in the hot oil for about 3-4 minutes per side, until it’s nice and browned. This locks in the flavor! 🔥

Add the Good Stuff: Sprinkle the onion soup mix over the roast. Add the beef broth, water, garlic, thyme, and rosemary. Give it a little stir, then add the carrots, potatoes, and onions around the roast. 🍲\
