spicy, and perfect for dinner, game nights, or anytime you need some serious comfort food! Let’s dive in!

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel diced tomatoes & green chilies, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheddar cheese (or a Mexican blend)
  • 1 bag (32 oz) frozen tater tots
  • 1/4 cup sliced black olives (optional)
  • Sour cream, chopped green onions, and cilantro (for topping)

Instructions:

  1. Cook the Beef: Preheat your oven to 375°F (190°C). In a large skillet, cook the ground beef over medium heat until it’s no longer pink. Drain any excess grease. 🌮

Season It Up: Add the taco seasoning to the cooked beef, along with the Rotel, black beans, and corn. Stir everything together and let it simmer for about 5 minutes. This is where all the flavor happens! 🔥

Assemble the Casserole: Spread the beef mixture evenly in the bottom of a 9×13-inch baking dish. Sprinkle 1 cup of shredded cheese over the top. Then, arrange the frozen tater tots in a single layer on top of the cheese. Make it look cute! 😎

Bake It: Pop the casserole into the oven and bake for 30-35 minutes, or until the tater tots are golden and crispy. Pull it out, sprinkle the remaining cheese over the top, and bake for another 5 minutes until it’s all melty and delicious. 🧀✨

Top & Serve: Let it cool for a few minutes, then top with sliced black olives, sour cream, green onions, and cilantro if you’re feeling fancy. Serve it up and watch it disappear!
