Hey fam! 🍽️ Let’s make the ULTIMATE comfort food today—Meatloaf with Mashed Potatoes and Cheese! We’re talking juicy,

flavorful meatloaf topped with creamy mashed potatoes and a cheesy layer that’ll have you going back for seconds. Ready? Let’s do this! 🙌

Ingredients:

For the Meatloaf:

  • 1 lb ground beef (80/20 is perfect)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp Worcestershire sauce
  • Salt & pepper to taste

For the Mashed Potatoes:

  • 4 medium potatoes, peeled and diced
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt & pepper to taste

For the Cheesy Topping:

  • 1 cup shredded cheddar cheese (or your fave cheese)
  • 1/4 cup grated Parmesan (optional but adds a nice flavor!)

Instructions:

  1. Preheat the Oven:
Set your oven to 350°F (175°C) so it’s ready to bake your meatloaf to perfection. 🔥
  2. Make the Meatloaf Mix:
In a big bowl, mix together the ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, ketchup, mustard, Worcestershire sauce, salt, and pepper. Use your hands (yeah, it’s messy but fun!) to mix it all until combined.

3.Form the Loaf:
Press your meatloaf mix into a loaf shape and place it in a greased baking dish. Pop it into the oven and bake for about 45 minutes to 1 hour.

Potato Time! 🥔
While the meatloaf is cooking, boil your diced potatoes in salted water for about 10-15 minutes, until they’re super soft. Drain, then mash them with butter, milk, salt, and pepper. Keep them creamy and fluffy!

Layer on the Potatoes:
When your meatloaf is almost done (like the last 10 minutes), take it out and spread the mashed potatoes evenly over the top. Think of it like frosting a cake—but with potatoes! 😆

Cheesy Finish:
Sprinkle the shredded cheddar and Parmesan cheese all over the mashed potatoes. Put the meatloaf back in the oven for about 10 minutes, until the cheese is all melty and golden.

Serve It Up:
Slice that cheesy, mashed potato-covered meatloaf and dig in! It’s so good, you’ll want to eat the whole thing in one go.
