Okay, so you know stuffed peppers are already awesome, but when you throw in some Parmesan chicken?

GAME. CHANGER. This recipe is super easy and sooo delish. Let’s get cookin’!

Ingredients:

  • 4 large bell peppers (any color, they all rock)
  • 2 cups cooked shredded chicken (store-bought rotisserie = lazy win!)
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley (optional for that extra fancy look)

Instructions:

1.Prep the peppers: Slice the tops off your bell peppers and scoop out all the seeds. No one wants those! Preheat your oven to 375°F (190°C).

2.Mix the chicken filling: In a bowl, mix the shredded chicken, marinara sauce, half of the mozzarella, all of the Parmesan, garlic powder, Italian seasoning, salt, and pepper. It’s already smelling amazing.

3.Stuff the peppers: Fill each bell pepper with your cheesy chicken mixture. Don’t be shy—pack it in there!

4.Top with cheese: Place the stuffed peppers in a baking dish. Sprinkle the rest of that mozzarella cheese over the top for that melty, cheesy goodness.

5.Bake: Pop the dish in the oven and bake for 25-30 minutes, or until the peppers are tender and the cheese is all bubbly and golden. Yum!

Serve it up: Take ‘em out, sprinkle some fresh parsley on top if you’re feelin’ fancy, and dig in!
