Hey, brownie lovers! Today we’re making Zucchini Brownies, and I promise you won’t even taste the veggies
These brownies are super fudgy, chocolatey, and sneaky healthy with grated zucchini mixed right in. Let’s get baking!
Ingredients:
- 1 1/2 cups grated zucchini (about 2 medium zucchinis)
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional, but sooo good)
Instructions:
1.Preheat & Prep: Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
2.Mix Wet Ingredients: In a large bowl, combine the grated zucchini, vegetable oil, sugar, and vanilla extract. Stir it all together until it’s well mixed and the zucchini is coated.
3.Mix Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
4.Combine Everything: Add the dry ingredients to the wet mixture and stir until just combined. The batter might seem a little dry at first, but the moisture from the zucchini will make it all come together.
5.Chocolate Chips (Optional): Fold in the chocolate chips if you’re using them. More chocolate = more happiness!
6.Bake It Up: Pour the batter into your prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick comes out mostly clean with just a few crumbs.
7.Cool & Slice: Let the brownies cool in the pan before slicing. Then, enjoy the fudgy goodness!
