Ingredients:
- 2 boneless, skinless chicken breasts (sliced into strips)
- 12 oz angel hair pasta (or your fave pasta)
- 2 tbsp olive oil
- 4 garlic cloves (minced)
- 1 small onion (diced)
- 1 cup chicken broth
- ½ cup white wine (optional but tasty)
- ½ cup heavy cream
- 2 tbsp lemon juice
- 1 tbsp Italian seasoning
- 1 tsp red pepper flakes (optional for spice)
- Salt and pepper to taste
- Fresh parsley (for garnish)
- Grated Parmesan cheese (for serving)
Instructions:
1. Cook the Pasta:
Bring a pot of salted water to a boil and cook the angel hair pasta according to the package instructions. Drain and set aside.
2. Cook the Chicken:
In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the chicken strips and cook for about 4-5 minutes per side until golden brown and fully cooked. Season with salt, pepper, and Italian seasoning. Remove the chicken and set it aside.
3. Make the Scampi Sauce:
In the same skillet, add another tbsp of olive oil, then toss in the minced garlic and onions. Sauté until soft and fragrant (about 2-3 minutes). Pour in the chicken broth, white wine (if using), and lemon juice, letting it simmer for 5 minute
4. Get Creamy:
Stir in the heavy cream, and let the sauce simmer until it thickens a bit (about 3-4 minutes). Add red pepper flakes for a little heat if you like things spicy!
5. Combine & Serve:
Add the cooked chicken back into the sauce, along with the pasta. Toss everything together until it’s coated in that creamy scampi goodness! Garnish with fresh parsley and a sprinkle of Parmesan cheese.
