This soup is super easy, hearty, and packed with flavor. Perfect for when it’s cold outside, and you need something filling and delish.
Ingredients:
- 1 lb Italian sausage (mild or spicy, your call)
- 2 cans (15 oz) white beans (like cannellini or navy beans), drained and rinsed
- 4 cups chicken broth
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes
- 2 cups kale or spinach (chopped)
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- Salt & pepper to taste
- Parmesan cheese for topping (optional
Directions:
1.Cook the Sausage:
Heat up your olive oil in a big pot over medium heat. Add the sausage and break it up with a spatula as it cooks. You want it nice and browned, which takes about 5-7 minutes.
2.Sauté the Veggies:
In the same pot, toss in the chopped onion and minced garlic. Let them cook in the leftover sausage goodness for about 3-4 minutes until the onion is soft and the garlic smells awesome
3.Add the Beans & Tomatoes:
Now, throw in the white beans, diced tomatoes, and Italian seasoning. Stir it all up so everything gets mixed.
4.Add the Greens & Sausage:
Toss in the kale or spinach and the cooked sausage. Cook for another 5 minutes until the greens wilt and everything looks amazing.
