It’s Italian Creamy Tuscan Chicken Pasta time!
We’re talking creamy, garlicky, chicken-y goodness, mixed with sun-dried tomatoes and spinach – basically, Italy on a plate! Let’s get cooking!
Ingredients:
- 2 chicken breasts (slice ’em thin or dice ’em up!)
- 2 tbsp olive oil 🫒
- 3 garlic cloves, minced (because garlic is life)
- 1 cup heavy cream 🥛
- 1/2 cup grated Parmesan cheese 🧀
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups baby spinach (so we can say it’s healthy 😂)
- 1 tsp Italian seasoning 🌿
- Salt & pepper, to taste
- 12 oz pasta (penne or fettuccine are perfect!)
- Fresh basil for garnish
Directions:
Cook the Pasta: Boil that pasta according to the package instructions. Don’t forget to salt the water! Drain and set aside.
2.Cook the Chicken: Heat up your olive oil in a big skillet over medium heat. Add the chicken, sprinkle with salt, pepper, and Italian seasoning, and cook until golden brown (about 5-7 minutes). Take the chicken out and set it aside.
3.Make the Creamy Sauce: In the same skillet, toss in the garlic and cook for about 30 seconds (don’t let it burn!). Then, pour in the heavy cream and stir. Let it simmer for a couple of minutes to thicken.
4.Cheese Time: Stir in the Parmesan cheese until it melts into the sauce. Creamy heaven right there! 😍
5.Tuscan Vibes: Add your sun-dried tomatoes and spinach. Stir until the spinach wilts and everything is mixed nicely. Your kitchen is smelling AMAZING right now!
6.Bring it All Together: Add the cooked pasta and chicken back into the skillet, tossing everything in that creamy, dreamy sauce.
