What You’ll Need:
1 package of pie crusts
1 cup pumpkin puree (canned or homemade)
1/2 cup sugar
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup evaporated milk
1 egg
Let’s Make Mini Pumpkin Pies!
1.Prep Time! Preheat your oven to 350°F (175°C). Grab a muffin tin and spray it with some non-stick spray or line it with cupcake liners.
2.Crust Action: Roll out your pie crusts and use a round cookie cutter (or a glass) to cut out circles. Press each circle into the muffin tin to form mini pie shells
3.Pumpkin Magic: In a bowl, mix together the pumpkin puree, sugar, cinnamon, ginger, nutmeg, and salt. Then, add the egg and evaporated milk, and stir until it’s all smooth and creamy.
4.Fill ‘Em Up: Pour the pumpkin filling into each pie shell, filling them almost to the top
5. Bake Time: Pop your mini pies into the oven and bake for about 20-25 minutes, or until the filling is set and the crust is golden
6.Cool & Top: Let your pies cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely
