Cooking Time: 6 Minutes Per Batch
Ingredients :
1 teaspoon butter
2 tablespoons chopped green onions
1 cup cooked chicken, shredded
2 tablespoons chopped green chiles
2 ounces Pepper Jack cheese, shredded
4 tablespoons salsa
½ teaspoon lime juice
¼ teaspoon cumin
½ teaspoon chile powder
⅛ teaspoon garlic powder
12 corn tortillas
oil for misting or cooking spray
Directions :
1. Melt butter in a saucepan over medium heat. Add green onions and sauté a minute or two, until tender.
2. Remove from heat and stir in the chicken, green chiles, cheese, salsa, lime juice, and seasonings.
3. Preheat air fryer to 390°F.
4. To soften refrigerated tortillas, wrap in damp paper towels and microwave for 30 to 60 seconds, until
slightly warmed.
5. Remove one tortilla at a time, keeping others covered with the damp paper towels. Place a heaping tablespoon of filling into tortilla, roll up and secure with toothpick. Spray all sides with oil or cooking spray.
6. Place taquitos in air fryer basket, either in a single layer or stacked. To stack, leave plenty of space between taquitos and alternate the direction of the layers, 4 on the bottom lengthwise, then 4 more on top crosswise.
7. Cook for 6minutes or until brown and crispy.
8. Repeat steps 6 and 7 to cook remaining taquitos.
9. Serve hot with guacamole, sour cream, salsa or all three!
